Ingredients in bacon jam:


●10 slices of bacon (thick-cut works best)


● 1 cup chopped onion (red or white)


● 1/3 cup brown sugar


● 2 tablespoons of the best balsamic vinegar (or cider vinegar)


● 2 tablespoons of water



Recipe


●Cook bacon until crisp. Drain all but 2 tablespoons of grease from the pan, remove the bacon and drain it on paper.


●Add sliced onion and saute until it becomes soft.


●Now it's the time to combine it with brown sugar, balsamic vinegar (or even EVOO), and water. It would be good to reduce heat and simmer until sugar and vinegar reduce to a syrupy texture. Cut bacon into small pieces and add to the mixture. You won't believe it, but add a splash of your leftover morning coffee. Stir well to combine.
